I always thought it was a tornado on the water, like in Wind Waker when that frog guy chases you every so often until you hit him with an arrow, but I guess it's not actually that. So what IS a hurricane?

https://en.wikipedia.org/wiki/Tropical_cyclone

A tropical cyclone, or hurricane, is a rapidly rotating storm system characterized by a low-pressure center, a closed low-level atmospheric circulation, strong winds, and a spiral arrangement of thunderstorms that produce heavy rain or squalls. Depending on its location and strength, a tropical cyclone is referred to by different names, including hurricane, typhoon, tropical storm, cyclonic storm, tropical depression, and simply cyclone. A hurricane is a tropical cyclone that occurs in the Atlantic Ocean and northeastern Pacific Ocean, and a typhoon occurs in the northwestern Pacific Ocean; in the south Pacific or Indian Ocean, comparable storms are referred to simply as "tropical cyclones" or "severe cyclonic storms".

So it's kind of like a tornado but it's 100+ times bigger and it's the clouds in the system collecting and rapidly moving in a circle with no tornado "spout"?

It's a Tornado that's about 1000x times bigger and travels over the water. Otherwise known as a typhoon.

The weather people can always include that category for Dorian, if not improve categories 1-5. That being said, it would be a first in the annuals of hurricane history.

The Saffir-Simpson Scale was designed to measure the potential damage to man-made structures. Category 5 is "Extremely catastrophic damage", so there's not really any need for a higher category since pretty much everything has already been destroyed.
