Rogue Galaxy had a fight with two forms, followed by a section where each individual party member had a 1 on 1 fight against a boss, and with like one exception the boss was one that character would be ineffective against fighting with normal strategies. So basically you either have to turtle the fight, or have got to play risky to finish them off quickly (if possible).

Suikoden only has one final boss. You do have a mini-boss fight at the entrance to the last dungeon, but after that it's just the one final boss at the end and it only has one form.
