I know the rest days between the workouts are just as important as the workouts themselves...

but do you guys think bi/tri isolation days are going to fuck with my recovery or do you think I can SL 5x5 on the three days they want me to and add an extra 2 days of arms

Everyone definitely does not say that. And it sounds like you don't trust them anyway since you want to change the program.

Just add an assistance at the end of a workout if you have the time and energy. Please rest on your rest days.

But if you're skinny and following a program correctly, you're going to build muscle in those areas regardless.
