This is a pretty standard practice in the food and service industry. At the point a restaurant knows theyre closing their doors for good it becomes a process of trying to minimize the money lost as they near their closing date.

If employees are privy to the information that their business will soon be closed, the fear is it will lead to things like theft by those employees and other such behavior.

For big chain restaurants they also dont want employees knowing they may soon be losing their job (although most in that case offer a severance or transfer to another location option) and for them to become disgruntled because of it. The fear there is that their care for the guests will dwindle to nothing and in turn their guests will receive poor service which may negatively reflect on the company as a whole. It could also hurt their return business if someone has a bad experience at say an Olive Garden location that is closing, but now that someone has vowed they will never eat at any Olive Garden ever again, not just that particular location because of their experience that outing.

Its a shitty practice though I agree and its done solely to protect the interest of the business with little or no regard for the employees which make it run.

pizza hut did a no notice shutdown. one day they closed down.
it went downhill ever since the domino's popped up.

this happened in another franchise war between subway and quiznos.

Depending on the size of the location, a possible tell for employees is to watch the main manager for a sudden shift in behavior. A huge red flag is if they see the manager dumping paperwork in the trash. While offering transfers is a common thing, in many cases the offer is functionally BS because other locations aren't hiring and don't want to take hours away from current employees.
