Because they seem more badass that way. Like they are a loner that wears minimal armor because they never get hit, and they move at super speed.

If I'm imagining correctly what you're describing, that's basically what a rnin was, a samurai without a lord or master.

I always picture samurai fully armored, personally. I don't picture them like Samurai Champloo or Yojimbo.
