One thing I didn't like about the games were the accuracy requirements and ban on using the targeting computer if you wanted medals. Made getting them really boring.

RS2 went even further by adding a death counter for medals
makes the infinite lives cheat rather pointless

Nah, Rogue Squadron had more and better missions, better music, actual story and characters but didnt let that get in the way of fun missions, harder difficulty, lots of original content, and cooler ships.

Escape from Fest and Raid on Sullust were always the toughest levels. My Sullust tactic was basically taking out the missile turrets first while continuously flying at full speed with lots of turns, then focus on the shield transmitters (still flying at full speed, due to the constant threat of TIE interceptors at my back.

Fest is my least favourite type of level, sine you have exactly zero spare time to explore the level or take your time to make a few extra kills.
Rogue Squadron 2 was full with levels like that, which is why I didn't like that game at all.

Easily the best thing about RS1 is you could mess around and have fun in the stages (and in many cases not even lose)
Fest and the Kessel stages are just about the only exceptions

I have a GameCube and Rogue Leader but I feel like it would look like shit on my 55 inch TV. Does emulation handle Rogue Leader well enough or am I gonna have to suck it up and play it on the GameCube?

You can get an adapter that let's you use HDMI and play games at 480p. Rogue Leader didn't look too bad on my 55" UHD TV. I use a GCHD. It's expensive but cheaper than the stupidly overpriced composite cables, though. I think there's cheaper ones out there too.

They probably weren't but I was really young and games were hard

Upgrades make a world of difference. They really don't tell you they exist.

rogue squadron 1 didn't work too well on PC for me. I made it through 3 missions before giving up

camera didn't follow my ship properly in any view outside of cockpit, and NPC ships were really jittery so it made it hard to aim properly

Yeah, this problem sounds familiar. IIRC on PC I used to solve this by switching the camera to front view first, then rear view (F2, then F1, if memory serves).
The camera should be stable now.
