If it was FF2 remake, people wouldn't really care, it would be just another remake whereas 7 Remake actually means something, it is the biggest remake in the eyes of the people, possibly ever. Also, I'd argue FF shouldn't be remade into what you suggested. You are basically asking for them to turn it into something different. It's one of the very first 3D games and it really shows; it looks like using Lego characters because the models (especially outside of battle) are just so very simplistic. The later 3D games have a lot more polish in comparison, and none of the 2D games look particularly bad, despite having potential to be great as 3D games... It's also Square's most popular game of all time and is responsible for their notable position in gaming as a whole.
