I haven't seen that show in over 20 years. It's just how I remember it as a kid. Seemed very episodic, or formulaic. Then I hear about people watching all 900+ episodes like you'd watch anything else (which is fine, do whatever you want)... hard for me to fathom

I have wondered this too, I used to watch it all the time in the Kanto days but only sporadically since. Have they abandoned the single episode stories with Team Rocket interrupting every time to get blasted off again? Is there more of a story arc like all other popular anime now?

Judging by Pokmon Sword and Shield, I would assume it is still exactly the same lol

Every episode felt like it was the same thing:

Ash and friends meet a trainer who has just one Pokemon (usually something unique). Team Rocket tries to capture said Pokemon. Pikachu uses Thunderbolt and Team Rocket blasts off again. Repeat endlessly.

The initial plot is Ash turns 10 making him eligible for his first Pokemon. After becoming rivals with Prof. Oak's grandson Gary, Ash sets out into the world (Kanto region of Japan) to start his journey. Along the way making friends, learning of the Pokemon League and going to the gyms, and catching more Pokemon (slowly) all awhile being endlessly pursued by 3 ignorant members of Team Rocket who seem to believe Pikachu is among the rarest Pokemon due to it's strength seen in their first encounter.

As the seasons went on yes it was pretty much more of the same. Some friends would stay, some would go home and be replaced by a new character(s). Ash would move on to the next region with Pikachu by his side leaving the rest at Oak's lab. He'll learn of a new league or tournament and try to win it. The new friends would usually get involved with the contests and such from the games. The new villains from the games would be present, but moved aside in favor of Jessie, James, and Meowth who regardless of failure after failure for episodes on end continue to stalk Ash and friends.

and Ash is STILL 10 throughout all of this which has never made any sense.

It's an episodic children's show that noone on Earth has watched in its entirety because they've only seen the episodes that were new when they were 10.

I personally found the X/Y series to be really good. Pretty good pacing, several story arcs spread throughout the season, plenty of character development, the evil team from the games actually having a meaningful presence, Ash finally having a team of fully-evolved Pokemon (sans Pikachu). It went downhill real fast afterwards though. The Sun/Moon series is practically entirely filler.
