How do you prefer your difficulty in games?

For the sake of argument let's say in each case the game is still engaging and fun, and it's only about personal preference.

Every game should start easy and get harder.

Its why Demons Souls was the biggest waste of $60 in my life.

I loved demons souls for it, though Tbqh it kinda does start at its easiest except for the final boss.

I like my regular enemies to be a threat and boss fights to be a big threat, but I also don't want to lose a bunch of progress if I die. So lots of checkpoints and/or save anywhere

Basically Dark Souls with tons of bonfires and not losing xp or whatever

Challenging, but not artificial hard (due to poor controls, camera, and character design/options).
