I like that they used that turd of a line as the cherry on the top of the shit sundae that was that trilogy.

It felt similar to the ending of Skyward Sword when Fi says goodbye and they try to pretend that you're supposed to feel an emotional connection to the NPC that did nothing functional aside from stalling your gameplay with over repeated calculation based dialogue and Wiimote battery warnings.

This was definitely the intention (Include Han and Chewy in there as well). She interacts with the original cast more than all the other characters (hell, she interacts with them more than she does Finn and Poe and Rose).

That is my interpretation as well. I just wished their interactions were over a longer period of time. I think between The Last Jedi and Rise of Skywalker was about a year or so? I wanna say one cannot really put a time limit before one becomes "part of the family" but it still felt kinda fast. From A New Hope to Return of Jedi was over a period of a couple of years I recalled and there were a few books in between for character development. Again, I know time does not automatically mean a bond is formed but the Sequel Trilogy kind of flew by rather quick.

She is of the skywalker school. She can inherit the name out of honor to her teacher. However she is only a cousin to the skywalker family. Anakin is her uncle and he did not inherit his fathers name as they acted like they pulled a vigin mary and just defaulted the name to the mothers maiden name (like the girls on maury).

So no she is not a skywalker but inherited the name following pope rules.

Curious. Are some fans' beef with her claiming the Skywalker name is because Luke or Leia did not officially "adopt" her into the family and simply annoyed that she claimed the name on her own?

Given how some fans refuse to acknowledge Disney's material as canon, had Luke or Leia did "adopt" Rey, would some fans had been more accepting of that or still refuse to accept her as a Skywalker due to her Palpatine bloodline?

Given how large the fan base is, I am sure we will never come to an agreement and that is perfectly fine. Some fans do not acknowledge anything outside of the Original Trilogy and I see nothing wrong with that either.

For me that's part of it, but also she had a closer connection to Han than Luke. Given her relationships with Han, Leia, and Kylo/Ben, she really should have taken the name Solo.

Fair point and I can agree with that. Even when I mentioned about Leia "adopting" her, in the back of my mind I was asking myself wouldn't Rey be a Solo then? Given her limited interaction with Luke from the end of The Force Awakens to The Last Jedi, I can agree being a Solo seems more fitting compared to being a Skywalker.
