My own assessment is that I try to understand the how and the why of certain things, such as the presence of some ingredients, when or how much to add, how much heat to use and for what length of time, and so on. Certain dishes I still need to learn not to overcook/dry out and others I need to be mindful of the seasoning/spiciness as I am not the only one eating it.
