Just barely, though, and I died not long after entering the second area.

Meg was in the lounge, and they talked as if they were going to fight each other again.

So, does that mean that bosses have to be fought every time you do a run, even if you previously beat them?

Yep. But after a while you'll see some variation in their patterns for different reasons

She gets pretty manageable as you start figuring out her pattern. She has two melee attacks, one in a straight line and one in a circle around her, both telegraphed. Look for when she crouches and jumps straight up, respectively. Then she has two ranged attacks, one with projectiles in a cone and one with circles on the ground. The projectiles you can dodge or deflect if you have Athena, or you can just break them with your attacks. The circles on the ground give you time to dash out of the way. Practice these patterns and then she'll be a cakewalk :)
