where i can have actual rides from specific amusement parks. Hell i want to recreate Cedar Point or combine two parks from Cedar Fair. Neither RCT or PC scratch that itch LOL. Maybe it's due to how much i like Cedar Point.

That's called licensing (didn't the RCT series already have 6F-branded ones?). Anyways, I'm sure there are fan recreations in the games you mentioned if you don't want to make them yourself.

I would like to see Cedar Fair team up with a game studio to create their own game. Cedar Fair owns the trademarks to all the coasters they've had built so i don't think licensing for coasters would be an issue.
