Probably Skullgirls. It has a mechanic where if you repeat a move even once your opponent can tech out.

I think SF4 has some long combos with 1 frame links.

Id go with some tag team game, like MvC3. The basic stuff is easy, but when you start getting into the insanely long stuff with multiple assists, OTG attacks, tag-ins, or even infinites, it gets really crazy.

i remember doing all the combos on the challeneges in mortal kombat deadly alliance, that shit was brutal, you have to do a ridiculously long combo while changing weapons and shit.
