Worried I'm gonna make the game impossible if I pick a bad team. Was thinking Monk, Thief, White and Black Mage.

monks are funny damage dealers who do more damage when you don't have weapons and red mages are mages that can do white and black magic but only up to a certain point

You need a warrior for tanking and a white mage to heal.

Honestly the rest can be theives or red mages just to stack saber and haste warrior.

Nah. Two monks do so much damage after the class change that they can smash p much anything.

Four 'naked' Monks start lawnmowering the entire game somewhere around level 8.

That party is fine. Monks are awesome

The one time I finished that game I used this classic party

Fighter
Thief
Black mage
White mage

And was able to kill the final boss with those classes

Any given 4-man party should be able to take down the endboss around level 27 or so, probably earlier.

Do 3 monks and a white mage.

Your team will be fine. Monk turns into the best damage dealer in the game. Thief is horrible in the NES version of the game, but is fine in any other version. For early game purposes, the red mage is a black mage that can actually dish out attack damage.
