I was thinking about paying for a helicopter ride over the Grand Canyon (surprisingly affordable!) on another day, but I don't want to overwhelm her. What are other fun activities? For the next two years we will not be living in the same place and she's not going to be in a stable enough situation to handle owning a pet during that period.
