Will need a large baking pan, parchment paper

Pumpkin Roll mix
3 Eggs - 1 cup Sugar
1 cup Pumpkin puree
cup Flour - 1 tsp Baking Soda
1 tsp Cinnamon - tsp Nutmeg

Cream Cheese mix
8 ounces Cream Cheese (softened)
4 Tbsp Butter (softened) - 1 tsp Vanilla
1 cup Powdered Sugar

Preheat oven to 350F
Mix Eggs + Sugar together
Add Pumkin Puree and mix
Mix Flour, B.Soda, Cinnamon, Nutmeg together in a 2nd bowl and add to first bowl. Mix until smooth
Line pan with paper and pour mix evenly
Bake for 15 minutes and middle of roll should be spongey and spring back if pushed with your finger when ready
Cut second sheet of parchment paper and flip pumpkin sheet onto paper, peeling off first paper
Roll pumpkin sheet as tight as possible and let cool for about 15-20 minutes

Add all cream cheese mix ingredients into a large bowl
I use a fork to break up butter and cream cheese, then mix together with a whisk
mix until all lumps are smooth, set aside

After roll is cooled, unroll and spread cream evenly and re-roll tightly
I then wrap the roll with foil and twist the ends of the foil to compress the roll

Chill for about 2 hours
