I want to say sneak because it's so fucking OP in the game, but pragmatically speaking illusion would have the same practical benefits (via its invisibility and muffle spells) and restoration would be neat if it could dramatically improve the user's lifespan.

Speech would probably be one of the most OP skills of all, but the skill tree is mostly focused on merchant stuff. And a 30% boost to persuasion doesn't necessarily equate to much IRL, nor does doubling intimidation.

In general, most of the normal weapon skills won't be terribly useful because the weapons are obsolete. The same kinda goes for the armor, which also isn't practical much of the time. That really just leaves the magic and stealth-related skills. And then that really depends on how it ties to the real world. For example, enchanting would be OP since it lets you use abilities from multiple styles, but would you need to charge it with souls?

All things considered, I probably am leaning towards illusion since it has a wide array of useful effects and a fun element to it.

First thought was lockpicking, put that's too sketchy for my tastes. Sneak sounds like a good choice, granted, still stetchy but doesn't neccessarily have to be illegal, and with the fully skill tree, I probably won't be caught....

My heart yearns for Conjuration, but I'd probably go with Enchanting. Might not be as fun, but I think it'd be more useful in the real world creating interesting knickknacks. Well, assuming I could collect the ingredients. Be kind of useless to have the skill but lack the tools, in which case I'd fall back to Conjuration.

rules as written buying and selling prices are 10% better and goes up with rank. It just happens to be the skill is called haggling, so i'm claiming it.

You can also sell any type of item to any merchant, so everytime I want to buy a burger I'll bring something to sell which will make my quarter pounder even cheaper

Alteration would be my choice. Telekinesis, has lots of uses. With Transmute ore, i can make lots of money really fast. Waterbreathing could be really fun, since i live near the ocean. Ebonflesh to protect myself from harm. And paralyze if things get dicey.

A very close second is Restoration. Although, it probably would only work on wounds not diseases. I may be thinking of something else, but i vaguely remember not being able to cure diseases with the restoration tree.

Alchemy:

Potions and poisons you make are twice as strong.
Potions you mix with beneficial effects have an additional 25% greater magnitude.
Poisons you mix are 25% more effective.
Eating an ingredient reveals all its effects.
Two ingredients are gathered from plants.
50% resistance to all poisons.
All negative effects are removed from created potions, and all positive effects are removed from created poisons.

I'm going to put big pharma out of business with my aloe vera treaments.

Then I'm going to put everything in my mouth like a toddler and discover all the poisons hiding in everyday products.

That's hardly fair. By the same logic, none of the magic school skill trees should have any effect whatsoever, because magic doesn't eixst in the real world either.

If I'm picking Smithing, it should imply that I get access to weird dwarf and elf metals, dragon scale gear, and magical never-melting ice even if no one else does.

About 90% of the skill trees in Skyrim would be completely useless outside of Tamriel.

Actually I think "potion/medicine" making was one of the tangible forms of sorcery in the old testement. The other being divination afaik.

A decent amount of the stuff in elder scrolls is real world plants.

If it's a place you can't haggle, it can't have any impact. In the game, the raw skill already influences buy/sell prices.

The problem with alchemy is that many of the raw ingredients don't exist IRL.
