One of my favourite Indian cookery writers is Madhur Jaffrey, and she has a wonderful recipe for a chickpea curry.
I found this version online which is for American audiences. https://www.foodandwine.com/recipes/chickpeas-cooked-in-a-moghlai-style You can use tinned chickpeas and although the list of ingredients looks a bit intimidating it's really not - just various spices. chickpea curry is a great vegetarian dish. look up 'chana masala'. budgetbytes has a solid one w/cauliflower
