A couple of examples of channels I like, which may help with your recos:

Gaming

• Clemps (self-deprecating, self-aware, generally features content that I care about)
• Previously Recorded (masterfully cynical, contrarian takes)

Non-gaming

Basically, I like polished videos/commentary that doesn't take itself too seriously or is up its own ass with overanalysis (or at least if it is up its own ass, the awareness to acknowledge it).

Biggest turn ons:

• Cynicism
• Reverence for quality
• Storytelling/narrative ability

Biggest turn offs:

• Fanboyism
• Overt goofiness/quirkiness
• Trying to make a political/social statement in a YouTube gaming video

If you like GTAV DarkViperAU's channel is pretty great. His videos are incredibly entertaining, funny, and actually reveal a lot of information about a game I thought I already knew a lot about. He also uploads like 20 videos a day, so there's plenty of content.

Surprised no one has mentioned Scott the Woz yet

I think the Wha Happun? series on Matt McMuscles channel is also up Sephs alley. Each episode lays out the tragic tale of a shitty (or at least very infamously troubled) game and the events that led it to be that way.

For a more encyclopedic look at games, I love the various ___ Works series by Jeremy Parish, where each episode looks at a release or two for various consoles chronologically to tell an overarching story about trends and innovations for each system.

Also maybe the Worst Games Ever series by TripleJump which probably nets an S-rank in cynicism but isnt about storytelling at all.

Yeah I was thinking that as well. But I added them for the storytelling qualifier. When they do longer games with a lot of dialog, their voices and improv add a lot to the narrative as far as entertainment goes.

Mandaloregaming - Very cool dude who talks like a normal guy, makes review videos about a lot of eastern bloc/warhammer/broken games, has a lot of guest spots from other people in his low/mid tier YouTube fame

SsethTzeentach - Extremely edgelord/intentionally offensive (but not angry) gaming youtuber who reviews obscure/old PC games, extremely hilarious if you can appreciate the humor

VaatiVidya - the big prerequisite with him is that you need some experience with (or at least interest in) the Souls series, but he's basically the online lore luminary of that community. His Bloodborne videos are some of my favorite on YouTube.

KingK

He does retrospective reviews on a lot of older games (usually Nintendo ones). They're very well scripted and he talks in a really calm tone throughout. Plus he often has some really unique takes.
