Like if I bought mcdonalds for $5 it would show up on my bank statement as mcdonalds $5

But it's all digital and shit, so like why can't I mouseover my bank statement to see I got fries and stuff?

So that if you have to dispute a claim or prove you bought something you don't need an additional paper copy of the receipt, it's all in the bank statement

I'd guess mostly because these conventions were established before such details were feasible to include. That means people don't expect them, so banks and debit/credit companies have little incentive to put forth the effort required to design such infrastructure. Realistically, there's not a lot of demand for itemized receipts for most transactions anyway, and the handful of cases where one is needed, it's easy enough for the person who wants it to save their physical receipt.

Also, in some ways, this has effectively already been implemented in the form of email receipts, for the stores that offer that.

Some credit cards do that. I used to get detailed statements from my Sam's Club business Discover card that showed everything I bought at Sam's, Walmart, and a few other stores.
