How do submarines even work

like do they literally just fill with some water when they want to go down under the water? How do they go back up?

Yes. It's called ballast. When they want to surface they just vent (squirt?) some ballast

You fill the submarine with water to go down, and you pour the water out to go up.

By replacing it with air. Compressing the air increases its density, reducing its buoyant effect, then you decompress it to replace the water and reduce its density.

If you want to try it yourself, take a mouthful of water, dive, then spit it out underwater. It won't affect your buoyancy much, but you'll be able to empty your mouth pretty easily.

Submarines have large ballast tanks. They can fill them with water to make the ship heavier than water, or use pressurized air to push the water out to make it lighter.

Most submarines also have dive planes that act like the elevators on an aircraft, pitching the ship up or down. The ballast tanks are set to neutral buoyancy, then as the engines push the ship forwards it can literally fly underwater using the dive planes.

I can't imagine not knowing how submarines submerge and resurface but then again my father is a retired submariner.

On a mildly tangential note, I got on a pirate biography kick lately. Naval combat back then was kinda more exciting.
