Get some lean lamb and mix it with some 85/15 or even fattier chuck beef. Mix in an egg, bit of half and half and breadcrumbs/spices/salt/pepper/garlic/onion power/Worcestershire sauce/parsley/thyme.

For best results let it sit for a few hours in fridge, preferably next day. Shape wise they do best a bit chunky from my experience. Use olive oil to cook with, you can also combine a bit of olive oil/high temp oil of choosing in the mixture when prepping. Get the skillet nice and hot and leave for about 3.5-4.5 min on each side depending on how thick/well done you want it.

The best burger I ever had was barely a burger. Lamb patty, brioche-croissant bun(??), softboiled quail egg in the center of that bun, rosemary... it sounds stupid, but eating it was downright orgasmic. Mrs. Potts Bake Shop & Bistro, in San Juan. They're gonna be fucking big one day, mark my words.

Close second is, of course, White Manna's sliders, which are literally the best sliders in the world.

Sounds great but like something I'd prefer to eat as is, maybe with gravy and mashed potatoes on the side... or with ponzu sauce and grated daikon on top, and rice on the side.

If it's on a bun I don't like to mix in egg and bread crumbs very much.
