They say it's because quesadilla comes from the Nahuatl word quesatl, which means folded.

It's not though, y'all are just confused about the original and stick to one variant. You can have all the cheese you want, but the realdeal tortilla>>>>anything you'll find elsewhere

Disagree. I hate the sentiment of something being inherently better solely based off of authenticity. And I say this as somebody who is mexican and prefers authentic home cooked Mexican food in general.

No, the emphasis is on the tortilla being folded. It has stuff in it, just typically not cheese

So things like grilled squash blossoms, Potatos, chorizo, various other kinds of sausages, strips of poblano peppers, cream, meat, uitlacoche,
Chicharrn, hongos, etc

I went to a vegan potluck a couple of years ago and one of the people there ran a quesadilla cart in Mexico City during half of the year, so she brought a bunch of them for us to try. They were filled with sweet potato, squash blossom, onions, and peppers. She had some with huitlacoche, a fungus that grows on corn, but those were gone by the time I got there.

They were also on corn tortillas. I grew up on quesadillas that were just cheese and maybe chicken or beef on a flour tortilla, so they were a very stark contrast to what I knew. I loved them though. I still get down on Tex Mex style vegan quesadillas but I more frequently eat the other kind. I can't grow squash to get the actual gourd because of vine borers but I'm going to plant a bunch this year so I can get the blossoms.

I'm looking at a Nahuatl dictionary for "fold" and "quesatl" or similar does not appear in any of the entries. There are plenty of words with "cuelpa" or similar, but nothing close to what you are asserting.
