They lost their planet and only a small minority of their race survived, fleeing on ships.

I doubt those fleeing survivors brought the Quarian equivlant of Paul Blart Mall Cop with them.

Remember this was centuries ago.

Given what we know about their culture they probably had a lot of art and media while they were still living on their planet, but probably significantly less once they had to split up into the flotilla and species survival became the number 1 priority

And even if they did, why would Shepard ever see it?

If Earth was about to explode, NASA wouldn't be uploading the Rocky Movies onto their ships database as a priority.

Maybe it's like FFX-2 and Pre-War Quarian vids are collectable commodities.

Hold up, were Quarians part of the galactic community before the geth uprising or did they not meet aliens until after? Asari knew of them, but if the others did, even they should have pictures and stuff.

Quarians had an embassy in the Citadel.

Then all races should know what the Quarians look like, even if some can only find out through history books. It shouldn't be treated as a mystery.

I remember the Elcor live in really high gravity and thats why they do everything slowly.
I dont know enough about biology to say if their physiology makes sense.

As for the Quarian, I feel like perhaps theyre the result of them smashing two races together? And they intentionally chose not to depict a them without suits, even in the Geth museum, with a ridiculous hand-wave about them appearing as you know them or some crap.

Volus live on a really high pressure planet, so popping their suit is like taking an angler fish to the surface.

Elcor live on a planet with 4 g gravity, so they evolved to move slowly and carefully because falling is dangerous.

The speech is because they communicate by pheromone and microgestures that don't translate through speech, so their translators need to clarify emotional context. They do it automatically.
