For me it's Genichiro in Sekiro. Sword Saint Ishin has a more dramatic battlefield and it's hilarious that he will unload a pistol into your stomach a point blank, but the Genichiro fight is so tight and perfectly crafted. You have no choice but to engage him head on with total mastery of the mechanics up to that point.

Only because of how badass I could make it look while I did it: Valkyrie Queen in GoW2018.

It's a hard fight, but I play my games in a "thematic" way so that even if I'm not doing everything "right", it's still fun to watch.

Sword Saint Isshin is definitely up there for me. There's a ton of favorites for me in Monster Hunter like Ahtal-ka, Valstrax, Shrouded Nerscylla, Tidal Najarala, demo Magnamalo, and Iceborne Fatalis which are all fantastic in my eyes.

If I had to pick a single favorite that's pretty tough.

I think the oldest game I really have fun with the bosses is probably Metroid 87

of all time? Old Monk (Demons Souls) is amazing because you get to play as the boss. Basically. And the bosses in general are really cool. Dark Souls stepped it up a few notches though, and ultimately brought the Old Monk gag back for Spears of the Church, which is its own covenant as well actually, and encourages you to keep playing against heroes trying to beat the game. Which is super cool. Sekiro tho. Everything FROM does it gold.

Metal Gear series (esp Solid) has amazing boss battles. Psycho Mantis, man. Wow. Fat Man is so memorable too. The Boss (what a name) lol

I like Super Smash. Master Hand, basically, and Melee brought out the big guns with guys like Porky or giant versions of characters lol

Tyrant & Nemesis from Resident Evil are legendary. Plant 42 lol.

Basically everything from Shadow of the Colossus haha

Ocarina of Time has some real classic fights (Ganon, Ganondorf)

Bowser is classic

One of the most fun off the top of my head is fighting the Asari Spectre in the Lair of the Shadowbroker DLC as a Vanguard-- the two of you constantly Charging at each other all over the battlefield was a blast.

Getting to do something similar in ME3's Citadel was also good.

If we're talking MGS then Python vs Big Boss deserves to be there just for the speech right before the battle, I could actually feel the tension between comrade and comrade more than anything in MGSV

Raiden vs Solidus was also phenomenal just as a closer for MGS2, that's personal to me I guess since I was young at the time witnessing the constant harassment from Kojima that was MGS2 melting it's brain out

People forget why Kojima is the shit - look at all the memories everyone has with individual instances of a really good series of games. That's a job well done absolutely

I'm a sucker for duels generally

Tales of Symphonia spoilers Lloyd v Kratos duel. The last fight vs. Yuan and Botta together is a fun one too.
Kingdom Hearts 2 spoilers Sora v Roxas and Roxas v Axel in the beginning when you first use two keyblades. Also the Sephiroth fights.
Couple of really unique fights in Lost Odyssey like Rough Queen, Bogimoray, and Armored Train. Hell most bosses in that game make you think outside the box just a tad rather than just wail on em.

Super Metroid

Between Mother Brain having a surprise second phase, the Metroid sacrificing itself for you, and then tearing through the boss in retribution it was so damn cinematic and impactful for just an SNES game and no dialogue.

Luca Blight from Suikoden 2.

You ambush with arrows then fight him with three different 6 person teams then fight him 1v1in a duel and he still lives a little while.
