What do you think? It's a fairly basic meal but the family loves it so I try to make it once every 2-3 weeks. I made it with pork this time, which is actually my favorite when it comes to Japanese Curry.

Golden curry?

We usually make it once a month here. Cut up some potatoes, onions, and carrots, throw it all in the crockpot with some chicken, add a bit of water and the curry blocks, easy.

Anyways I do love thicker curries. Sad that my family only really ever made Vietnamese curry, which is basically a soup.

Exactly! So simple to make. It's great when you have a lot of guests because the cooking process is only slightly longer when cooking for 4 vs 10 people.

I love making Indian curries and as a whole would say I prefer them over Japanese curry. But every now and them a Japanese curry is a real treat. I have a 1 yr old and a 3 yr old and they eat it without complaints - which is worth so damn much!

Buy yourself some golden curry roux (can also be ordered from amazon) follow the instructions, make some rice and you're good to go! Totally worth it!

Thanks! I only started cooking more seriously in 2019. 95% of my cooking came from watching youtube videos tbh. Before I 2019 I could cook pasta and 2-3 other simple things.

not yet but i am on the waiting list. wouldn't mind if it took a few months tho, closing on my loft this month and my car broke down so have to buy a new one. it's gonna be a 200k+ month already lol. buying the BB58 to celebrate buying my first place.

i found some pouch curry at the grocery outlet last month. it was pretty good.
if i see it again i'll grab a pouch. it was 3$ for a meal.

only had to supplement some rice.

Soy sauce, diced chilli, extra curry powder (i used golden curry but add a bit more curry powder) and use a vegetable basic stock

Those are some good ideas. I've heard people add curry powder as well. I'll try that for next time.

I sometimes use dashi as base stock. Dashi is similar to bullion cubes that either come in powder or paste, but its basically fish flavored bullion cubes. It adds more umami and seafood aroma to it, sometimes i add aromatics like bay leaf or rosemary. It's honestly a very flexible recipe that has tons of variation and toppings.

For example instead of potatoes, i use kidney beans and meat.

Yeah add a smaller amount since the curry cubes usually are salty. It depend on your tounge i guess. I use more water as you can see, so bit of more salt is ok.

I am interest in youe home made dashi. What fish bones are you using?

I actually don't use fish bones. I use bonito flakes, a piece of kombu and niboshi. I use this stock for ramen, katsudon, oyakodon, gyudon, but haven't used it for curry before.

Man I really need to get to my Japanese cooking. I have been exploring many different cuisines but the only Japanese food I have made so far is a simple California roll, Zaru Soba, and Gyoza.

Swiss milk chocolate, interesting to say the least lol.
