Foie gras can be either duck or goose liver - while France might lean more toward the latter (not entirely sure firsthand) it's overwhelmingly the former in the US IIRC

I hated beef liver the one time I had it, but Ive had liver pate and thought it was good I forget what kind of liver, lol.
Only other organ I ever ate was a calf heart. It was like $2(!) for the whole thing and looked gnarly, but once you cut out all the scary-looking vasculature and cube it, it becomes beef. Tender, slightly chewy beef. It was pretty good, but I havent seen one since.

Yep. My old neighbour used to do a liver and onions night every now and then and would invite me over. He always mixed in bacon with the onions.

Whenever I see people reference liver they say stuff like ooooh it's really nice once you cover it in flour and spices and fry it! Guess what, so is everything, and there's a lot of meats that taste nice by default without being masked in other flavours.
