I've never played any of the games but figured you all would really want to know my opinion on this

Im currently playing trails of cold steel 1.
Never played trails in the sky.

the old SNES style grafix jive better than 3d to me

yeah same here... there are a lot of things i like better about sky. and crossbell.. but sky was my favourite, esp. 1&2

i started CS a few months ago and have stalled out in like chapter 4

I loved Trails I-III but have been pretty lukewarm about Cold Steel so far. I'm putting III and IV on hold until the Crossbell games get localized.

Graphics =\= Art Style

You like the style of Sky better but Cold Steel objectively has better graphics.

It's the ugly post 2000s style of anime that looks really really ugly. The way I see it, anime just doesn't work in 3d, the character models are hideously doll-like and just unpleasant to look at. Tits in the sky works because it's cutesy 2d sprite graphics, and it's why jrpgs of the 90s work because the sprite work is great. (Also as a personal preference I like the 90s style of animation more, up to early 2000s)

I noticed it while playing the otherwise amazing Tales of Berseria, and while I got used to the doll like character models after a while, whenever a skit would play out I'd be reminded just how much better the character portraits looks like as hand drawn animation.

For jrpgs, it's either cel-shaded graphics
or nothing. Anything else just doesn't look good like normal games do.

Edit: I like the way Persona does it. Besides the fact that they have excellent art design and draw their characters to actually look more like human beings instead of the noseless bug eyed anime monstrosities of modern anime, they have character portraits when characters speak and show emotion and that actually still works well to this day. If it ain't broke don't fix it
