Decent unions tend to have a strike fund. "Fuck it I quit!" usually does not.
Also, and the reason unions even exist, is that everyone stopping at once is way more meaningful than a handful of people leaving for other jobs at random times.

To improve the workplace and environment they're in and hopefully change the company for the better for everyone employed?

Plus finding a new job sucks and it's even worse if the reason for doing so is because of unfair treatment by your former employer.

Because sometimes it's more important to show the ills of what's plaguing your industry instead of just moving somewhere else and not seeing any change.

If you have a personal beef with your job (management sucks, hate the environment, whatever) then, yeah, find some new work. But if it's a widespread issue (long hours across the board, promises not being kept, change being proposed then ignored by management) then the problem is more fundamental than just a bad place to work. That's when a united front of workers all saying the same thing is necessary to get the message across.
