I haven't seen it in forever. So here's some things I've noticed:

-Kramer is named 'Kessler' for the pilot. But it changed to Kramer in the 2nd episode onwards. There's a flashback clip in one of the later seasons that references this by saying Kramer's nameplate had the name Kessler on it by mistake when Jerry first moved in lol.

-Elaine isn't in the pilot at all and doesn't show up until the 2nd episode

-The diner is completely different in the pilot and there's a waitress named Claire that they interact with. Apparently she was originally planned to be a reoccuring character but she was completely omitted after the pilot.

-Kramer has a dog in the pilot. They probably put the kabash on it because I'm sure having a dog in every episode would've been annoying to deal with <_<

-Jerry's apartment is completely different in the 1st episode and slowly changes to his normal apartment as season 1 progresses

-Jerry's dad is a completely different actor in season 1. His mom is the same though.

-George has more hair than normal lol

-Jerry only has 1 girlfriend in the whole season (she appears in 2 of the 5 episodes) and she's actually pretty normal

These are pretty tame/standard things that shows change when they try to work out the kinks after the pilot. I mean heck, George once said he had brothers but I dont think we ever saw them in the shows run and his parents don't reference them.

Don't they mention Jerry having a sister? But she is never seen or mentioned ever again

Jason Alexander was doing a woody Allen impression the entire first season till he realized George was based on Larry David

Golden Girls had a gay cook and Sophia had slightly different old-age makeup.

I think it was George. I thought the early parts of the show he talks about a brother or sister.

Kramer was just a really different character in general. He was more like a recluse grizzled kinda guy, more wierd in a bad way than fun way.

..I don't remember this. But there was a part where a bunch of extended family of Jerry was meeting at his place before going to a wedding for something. I must've missed it there.

Yeah, he definitely has a much more weirdo/creep vibe in the pilot instead of the more goofy vibe in the rest of the show.

House's pilot was real weird. It was almost like a noir.
