I should point out that I might be mistranslating the bolognese thing. It just says Mexican "Meatsauce" (Kdsauce. Kd = meat).

But in Danish that's what we call bolognese, so I'm assuming that's what's happening here and not that it's an unrelated "meat sauce"

I've certainly never heard anything other than bolognese called that.

Hell, 99.9% of the "Mexican" food here in Texas is Tex-Mex crap where they slather everything with nacho cheese and hot dog chili. Go to SoCal/Arizona/New Mexico for authentic Mexican food.

Cal-Mex is just as in-authentic as Tex-Mex. It's just not vilified like Tex-Mex for some reason. And Arizona/New Mexico also are heavy on the Tex-Mex. If anything they're worse because they go even harder on Tex-Mex stuffs like chili con carne than in Texas.

There is just a monolithic difference between good and bad Mexican regardless of authenticity. One of the better (and I use that term very lightly as the place isn't exactly that great) has a Mexican version of chili oil. Not traditional, but it's definitely very interesting (and definitely not Tex-Mex). Inversely the worst place in the area prides itself on being somewhat authentic but it's also hot trash.

Washington was a bad example because it's still prolly in the top 10 of US states for Mexican food. If you leave the i5 corridor you can find great stuff. Anything east of the Rockies has shit tier Mexican afaic. Have not been to the South though, so can't comment.

Have lived in New Mexico for a good portion of my life and have eaten at Mexican eateries quite a few time, I can tell you that this statement is a totally false. I have never been to a Mexican restaurant in New Mexico/Arizona where they slather chili con carne and queso on everything like they do here in Texas.

Then go to Los Mariachis, Nopalito, etc. in Las Cruces. I can only talk about my experiences and whether or not you've experienced the same stuff as me is pretty irrelevant to my statements.

They are but it's more the "lol, I only eat the most *authentic* of Mexican..." nonsense rather than something that people actually notice. Like, I could point out plenty of places that do have it as a thing, but I can just as easily point out the number of places that don't. For every place in Texas that does chili con carne on your burrito as a default there are dozens that don't. Both chili con carne and queso (and fajitas) are the cornerstones of Tex-Mex as far as dishes are concerned, but overall they are overdone as far as thinking that that's all there is to Tex-Mex is concerned.

Basically people like to think that they are the bastion of authentic whatever when the reality is that being authentic doesn't matter and they aren't actually any more authentic than the last guy. It's sort of like how burritos are done in a Tex-Mex style most places to the point that most people don't even know what the non-Tex-Mex version even is.

So I had the tacos. They were good. The Beef was very moist an yummy. There was salad, coriander and some sort of mixture of vegetables in a light salsa. Tomatoes and some others, I think onion and such. There were some options for dressing and I thought since I was doing this I should go all the way and got a spicy salsa. It was pretty hot, but enjoyable. There was also lime on the side and I wasn't sure if you were supposed to squeeze it over the tacos or bite into it. I chose the latter. It had a freshness to it after a bite. It was very nice. Helped with the spiciness. The bread was kind of bland. Felt like it could have been in naan or pita or something and not much would be different, though that is obviously not authentic.

Overall, my take away is that it was pretty interesting and I'd like to try some more Mexican cuisine, but I'd probably not go to that place again.
