From my understanding "Soulslike" is supposed to be a subgenre of action-adventures games that are particularly hard, and focused on environmental storytelling.

This. I consider it a Souls like if it has similar combat systems. Limited Stamina, limited healing items, can't cancel attack animations to block/dodge, you die in just a few hits and you lose accumulated exp upon death.

If it has multiple of those aspects, then yeah, I feel like they're copying Dark Souls.

Soulslikes can also be characterized by their unique online components, as well as well as big looping retro dungeons with a focus on art and gameplay over graphics and life simulator stuff, while constantly making passes on that subject matter.
