While DS1 has that novelty charm and a bit more choice in where to go at various points in the game, everything else is just better in DS3 I feel. Better controls and combat, better boss battles and consistently good area design I feel (in comparison with DS1 having higher highs and lower lows). Both have strong DLC's. 1 > 3 > 2 Dark Souls II is the weakest game in the Soulsborne/Sekiro/Elden Ring franchise but is better than like 95% of the games I have played. Truly the best streak of amazing games if you count Demon's Souls to Elden Ring as a series. Only other comparable phenomena is the Final Fantasy series from VI-X + Tactics.
