the spinosaurus fossils that have been found have been very very few compared to t rex. It also could have been another land dinosaur

There were actually multiple predatory dinosaurs bigger than T Rex. I think we've just found mostly compete T Rex skeletons unlike other big ones so that's why it's our favorite.

There's a lot of contention on whether Spinosaurus was a terrestrial predator, or more aquatic.

Recent evidence suggests it was mostly aquatic, though everything is up in the air.

It's more that Jurassic Park romanticized the crap out of Raptors and the T-Rex and now it's all people want to think about with dinosaurs.

That's fair though it still hunted on land and is thus available for the comparison.

Jaw shape, mouth size, and musculature are all things taken into consideration by paleontologists.
Not all fossils are just bone, many have skin or other bits fossilized as well.

Hell there's a fossil on display at Drumheller that's almost a perfect ankylosaur mummy.

They more or less just estimate it from things they can verify it bit through and from knowing the build of it's jaw. It outclasses everything else by a sizeable margin. They fairly recently reestimated it's bite and the numbers are even bigger than they thought before.
