Like you marinate a steak for four hours in a bag or whatever

Then you take it out

Do you need to add like salt and pepper before cooking or is the marinate alone enough

you should add it to your marinade if it's dry I think

not much other than pepper or finishing salt needs to be applied last imo

dried herbs n such will benefit from the marinade

I typically season with salt and pepper before I put it in the marinade. The marinade will also have salt and pepper as well.

also imo marinading steak is nice but hardly needed. you're better off keeping steak simple, let it sit salted for at least 45 minutes out in room temp and you'll have all the flavor penetration you need. I season my steaks after searing, pepper last

I should've clarified, it's not a dry marinate. Worschestire (sp?), soy sauce, dijon, and one or two other things im forgetting

maybe do the marinate, take it out about 30-45 mins before cooking like you say, salt it then, and then cook?

that would work!

I forgot to add that I do a sear then oven process, so thats when the seasonings (spice or herbs) get a chance to meld with the steak. not everyone does this nor is it the ideal method for all steaks/cooks

but yes, that order of things SHOULD do... don't know how marinating beforehand effects the osmosis of the salt

I usually just put seasoning in the marinade, no reason you can't add it after though if you want more of that flavor

I do sear then oven too. No grill access yet...
