I mean, there ARE wrestling games... and I guess that UFC game with all the glitches

But 90% of the fighting games I know of are entirely striking based with the occasional throw which pretty much only serves as a guard break

There were a few characters in the KoF series that were grappling based

and IIRC, King in Tekken had some pretty cool combo grabs that if you knew how to properly execute them, you could come close to or KO your opponent

King basically has you guessing from 3 options to escape the grapple every step of the way, and his strongest route is like 8 steps or something

but the inputs are arcane to me so i've never bothered to learn him

marduk has something similar but way easier because it's only one step, so i play him
