As far as I could tell from watching my friend play it (and based on the ingame text i saw during that) you attacks always snap to the closest beat no matter when you press the attack button. If you press the attack button on the beat you get bonus damage however

There were two in beginning but game doesn't let you practice on them forever

Oh the 3rd dummy you can practice light attack beat forever . Prob same with 2nd one too but by 3rd one you get the floating cat helper

taking a break on it for now
its fun getting the attacks to the beat. I have a high chance of missing the beat on the first attack tho and it stresses me out

At the least, there is an option to turn on the visual rhythm chart thing, to help with timing.

Your attacks always land on the beat so the timing is always the same No matter what

Maybe I didn't word that properly. But, it can help with getting the optimal combo damage or score or whatever.
