this was done with the NES and SNES, maybe it could squeeze a bit more life out of the switch?

maybe the chip could go into the dock?

Maybe just shove a bunch of crap onto it like the Sega Genesis.

8/16-bit era carts plugged right into the motherboard, so messing with (or sometimes replacing) the CPU was an option.
Switch carts are just dumb storage.

Nope. Everything is soldered to the board. At best they could do something like Microsoft Readyboost but that would not be significant.

Maybe some goofy 32X-style thing, where some co-processing is punted to the dock, but otherwise the dock is pretty much just a USB hub and some HDMI jazz.

From a technical point of view, yes.
But it wouldnt be practical.
Going the dock way might or might not work depending on if and how Nintendo blocked data from being transfered from it into the console. The USB speed will be a bottle neck.
...on the other hand, nothing really prevents the dock from being the more powerful CPU/GPU and the Switch is the addon CPU, but that would be pricy.
Adding one on the cartridge is still possible. It will however end with a really strange and heavy card. Best solution is probably a twice as tall card that ends with a cabel that goes to a box with the extra processing power and more RAM.
Which most likely will need an extern power source.
Add a card reader and you got an addon like the 32x.

Could just sell an upgraded dock as a separate peripheral to allow that choice. It'd probably sell well enough.

Thunderbolt, Displayport, and USB are all migrating to the same USB-C connector.
It's completely possible to stick a e-GPU in the dock, but it would take better hardware on the console side to push the bits.
