Yesterday I made wok poutine with homemade potatoes, tofu, Violife mozz curds, and better-than-boulion gravy. Was pretty good

I like old fashioned beans and potatoes

Nothing against chick'n or beyond beef, but I like black bean burgers or chickpea burgers just as much. There's so much attention these days to fake meats that the old-fashioned black bean burgers seems to have gone out of style.

Rarely do I find black bean burger option but it's so good.

Usually the veggie burger in burger places is just a bunch of vegetables mashed together and fried into a patty without a protein source.

But black bean burgers taste so... comfy? I just really like the texture as well as the taste.

Haven't seen any chickpea burgers but I know I'll like them if I ever find them

Here's my recipe for air-fried black bean burgers for anyone who wants it. I came up with it because I wasn't happy with any black bean burger recipes I could find online. They were all complicated, used weird ingredients, took a long time to make, and never turned out the way I wanted them to. I wanted one that was simple and easy to throw together but still flavorful.

Ingredients:
  • 1 can of black beans
  • 1 can of aquafaba (the liquid that comes in a can of chickpeas)
  • 1 cup of plain breadcrumbs
Mix together the ingredients. Season to taste. I usually use a pinch of salt, pepper, some onion and garlic powder but you can use whatever you'd like. Mix it all together and form into burger patties. Air fry for about 15 minutes at 400 degrees, flipping once halfway through. You can use a frying pan instead if you don't have an air fryer but I find the air fryer does a better job of binding it together.

If you can find this it's easy the best vegan cheese ive ever had. A little pricy but well worth the splurge. I usually use it for calzones.

So usually many stores sell soyrizo but it tends to be expensive, like $4+ for less than 16 oz.

Walmart though sells this pretty decent one for a really good price. Same price as it sells non soy chorizo. Not sure if every Walmart has it, I only just found it last year.

I just moved to the Atlanta area and I tried Slutty Vegan for the first time last night. Holy shit it was so good. Not good for vegan food, just amazingly good while also being vegan. I got the cheese steak with Skinny Dippers, which is their fried pickles.

I couldnt recommend it more, it was so good that my coworker and I decided to go back again last night. I like the cheesesteak better than the burger, but Im not a big burger guy. Next time I need to try their brats.

not vegan or vegetarian but i sometimes don't feel like eating meat so i'll explore

ordered a gluten free veggie burger thing tonight and it was delicious. i'm not even gonna pretend to know if it was vegan or not, no idea, but scrumptious all the same.

also been recently exploring different frozen veggie burger type things to find the one i like most. haven't found a huge favorite yet.

Any fans of TVP and soy curls? I buy them in bulk all the time. It's a really cheap and easy meat substitute. For ground beef I don't really buy things like Impossible Burger all that often anymore because of how cheap TVP and soy curls are.

I like to do a meal prep routine that uses a base of 1/2 pound brown rice, 1 pound black beans, and 1 pound lentils (dry weights) cooked and then split into five Tupperware bowls. Then I add in one 16oz block of tofu per bowl and whatever veggie I feel like. On Sunday I do all the rice, beans, and lentils plus the tofu and veggies for Mon-Wed, and then Wed night do the tofu and veggies for Thurs and Fri. Then I keep a variety of sauces so that every day is a different flavor.

Each bowl is meant to be eaten in two sittings, I do it for breakfast and lunch. The base of rice/black bean/lentil/tofu comes out to 1100 calories, 20g fat, 189g carbs, 35g fiber, 2g sugar, and 81g protein (0 sodium) per bowl before adding the daily veggie and sauce, or if you cost the tofu in something like corn starch to crisp it up more in the oven.

forks over knives has a lot of recipes centered around rice and beans

generally though just a good variety of vegetables, garlic and/or ginger, some spice like parsley or coriander or oregano and youre good to go

my typical lunch:

  • dice onion + bell pepper (i like red but green works too), optional: half head of cauliflower cut 1/4" thick, or some other neutral vegetable
  • 2 cans of black beans rinsed thoroughly, 1 can of corn rinsed
  • cook 1 cup of rice (1 cup dry)
  • spices: 1.5 tsp chili powder, 1 tsp ground cumin, 0.5 tsp oregano, 0.5 tsp paprika, 0.25 tsp cayenne pepper (to taste), 2-3 cloves garlic minced
  • heat up 2 tbsp olive oil in a large skillet then add the veggies + 0.5 tsp salt and sautee for 5-6 minutes
  • add the spices + garlic, mix and cook for 30s or until fragrant
  • add the beans + corn, mix thoroughly and cook for 1-2 minutes
  • add the rice
i top this with a generous portion of salsa and either serve in a bowl or in a burrito. lasts ~6 meals.

I use cans for convenience. i think they are $0.75 / ea, so that's $1.50 per week for lunch. yeah, i could reduce that cost to $0.50 or less, but the added overhead of cooking the beans isn't worth $1.

I eat a lot of meat and would definitely like to mix it up at the very least. If it's tasty enough and fits my macros, I'll eat it. For instance, I really enjoy those Purple Carrot frozen meals from the grocery store.

I often eat black bean and or lentils in a whole wheat tortilla

basically I mash half an avocado, add a little bit of lemon juice on it, a bit of salt and frank's red hot original sauce, I use this to replace mayo essentially

then add half a cup of cooked black beans or lentils

then add tomatoes, onions, green olives, banana peppers, spinach and lettuce, oregano, black pepper and mustard

Have you ever looked into TVP? It has a very similar texture to real ground meat, and it's very cheap. About $5.50 a lb at most grocery stores. I buy it in bulk and get it for about $3.38 a lb. When it's rehydrated it triples in weight, so 1lb effectively gets you 3lbs of meat, so it's actually cheaper than meat, even ground chicken. You season it yourself, and it doesn't have any salt of its own, so you have full control of the salt intake.
