There are good American cheeses. It's just that the most popular cheeses in America are the crap ones.

Colby, for example, is an excellent cheese. Monterey Jack (and its variants) is another.

Cream cheese (for bagels) is like Neufchtel... and is excellent, too.
If they were any good they would name them something special instead of just the classification of what they are.

I'm not sure how true this is, but I read from reddit that this was implemented after either WW1 or WW2 to help certain badly affected countries get back up on their feet by letting them produce something exclusive so everyone would have to import from that country.

Once I started to learn how to cook I'd find recipes for various dishes that all call for certain cheeses. Gruyere is an extremely common variety that you'll come across once you're out there actually paying attention to cheese.
