Ive been getting mixed answers on this. On one hand, Im hearing its the most nutritious part of the potato. On the other hand, Im hearing the skin contains a high amount of solanine which is bad? I dont know which one is true.

Yeah it's good. Just make sure it doesn't have buds or sprouts, if it does, don't eat it. Also if it's green, toss it.

The skin would be laden with whatever pesticides they used. As for solanine, just don't eat green potatoes.

is there something I'm missing here, why would the skins have the pesticides on them, they're underground

I'll add that if it has buds/sprouts you don't need to toss the whole potato, you can just remove them with a peeler the same way you'd remove the skin. might have to press in a little bit deeper but other than that the potato is totally fine underneath

Pesticides seep into the soil and then the potato's skin. Systemic pesticides are also absorbed by the parts of the plant that are above ground and then get circulated throughout the entire vegetable, but most of the pesticide content would be in the skin. Potatoes are also sprayed with chemicals after harvest to prevent sprouting. At the very least you need to wash the skin, even for organic potatoes that are grown without pesticides. But otherwise yeah, potato skins are nutritious and solanine is only a problem if the potatoes are green as far as I know. Even then, you'd probably have to eat a lot of them.

That's not true. The skin is nutritious, but most of the nutrients like potassium and vitamin C are in the flesh. The skin does give you more fibre and iron though.

That's weird, for other vegetables sprouting means its good for you and even more edible to eat. But for potatoes it means death?

When we boil crawfish, the potatoes have the skin on them and seems fine to me. I have been eating the skin all my life.

Yes. Just clean and scrub it and the skin is fine.

I eat the whole baked potato when I have one.
