Like, are there actual lore, or great character relations in them for the particular universe they're based on? Or is it literally just pick a character you like and play some sort of rythmn game with it, maybe with some funny dialogue here and there and probably some fanservice outfits?

Only the P4 one really has a story and it's kind of goofy. The other two are much more barebones.

The appeal is almost entirely in the rhythm gameplay if you're into that and the remixed songs. Some goofy outfits and character interactions too.

P4D actually had effort put into it and is actually canon.

P3D/P5D are lazy cashgrabs that are carbon copies of each other.

For the sick beats. I'm being 100% serious here.

Only Persona 4 Dancing has an actual story to it. It's pretty okay, considering it's a dancing rhythm game. But the other two games have "social links" though. Basically fanservice moments and cute/funny interactions between the characters.

It's a pretty okay but still standard rhythm game though imo.

Oh, the song determines the main dancer btw. So you can't pick anyone. They let you somewhat customize who the side dancer/s are though.

The 4 dancing game has a story and the 3 and 5 ones have some Social Links for the characters.

Can't date anyone sadly. Though certain dialogue options have them act coy, if that makes any sense? (Not Yusuke though lol)

They have some cool songs in them. Persona 5 Dancing is the weakest because of the lack of variety (it was one of the first Persona 5 spinoff games) and jazz music doesn't work as well for rhythm games as the more pop focused music of Persona 4 and the hip-hop focus of Persona 3.

4 has an actual story (not that its any good). 3 and 5 are basically just flanderized versions of the characters making small talk and jokes.
