I really like Vampire Survivors.

You play, you unlock some stuff with achievements, you die, you buy other stuff with the gold you got during the run, and then you start your next run trying to unlock even more stuff.

Some of the special characters to unlock are crazy op and broken, but hey, sometimes you just want to feel like a god.

And because every round is over after 30 minutes, you can't waste much time if you fail after all.

I found the progression in Returnal to be very satisfying. Specifically, how the weapons work. Using a lot of a weapon will upgrade its capabilities, and when you randomly find that weapon again, it will have those capabilities unlocked. The difference that makes is immense. I probably had about 6 weapons I really liked and upgraded and could usually find one fairly early in a run. And some are better on certain levels and vs certain bosses.

Vampire Survivor is constantly giving you new toys, but if by progression you mean a feeling like you're more capable of beating it, I would recommend:Hades and Rogue Legacy (no idea of the sequel is good)
