Because I know they just want to ask for something. I make the schedule at work so it usually has to do with that.
Coworker texted me "hey how are you" at 9AM. I didn't respond but they finally followed up with "can I have Monday off" at 7PM. I responded then with yes.
Can't they just ask me what they want? Are people just awkward? Why do they have to drag it out?

What I usually do is put the pleasantries AND the question in the same text >_>

"Hey, how's it going? Can I had tuesday off for an appointment?"

It is rude to respond if you are going to just respond later to something else. You should, however, take the opportunity to say something funny. Like "my foot is currently on fire can't talk now."

I get it, it's annoying since you know that they just want something. I usually just respond politely by mirroring their greeting, but get to the point asking if they need anything.

I'm with TC, though, and won't waste time with multiple messages. I'll just say hi and state what I need in the same message.
