I'm sure there's some overly elaborate explanation given in some Star Wars something or other. I think mostly it's because it looks more neat in a movie than a screen.

The hologram projectors they use seem to be a bit more portable than a device with a screen. It also seems like they give the person being projected 360-degree vision around themselves during a live conversation, since they turn their heads from side to side as people are speaking and can perceive everybody present. ...
