American cheese is my goto cheese for burgers.

Grilled cheese on the other hand? I'll often use it but other cheeses are great too so it's not such an obvious winner in that situation.

While provolone is good for a cheese steak, Cooper Sharp is the absolute best and that's an American cheese. Some places have started to use them in burgers too but I haven't had one yet.

That's the word I couldn't remember I wanted to bring up the point that it's the *only easy to get cheese with emulsifying agents in it that can make for a really good cheesy sauce without using flour, supposedly you can even mix other cheeses with American and the emulsifiers will keep it together.

Sodium citrate is supposed to do the same thing but I bought a packet of it and it came out terrible

*Only one besides Velveeta which is the worst cheese I've ever had which makes sense since it comes off a shelf.

You can definitely make Mac N Cheese without American. Personally I just make a roux and add some shredded cheese.

The shredded refrigerated Velveeta is good. Well just the cheddar one.

Velveeta is for an extremely specific purpose and it's great at what it does.
