While provolone is good for a cheese steak, Cooper Sharp is the absolute best and that's an American cheese. That's the word I couldn't remember I wanted to bring up the point that it's the only easy to get cheese with emulsifying agents in it that can make for a really good cheesy sauce without using flour, supposedly you can even mix other cheeses with American and the emulsifiers will keep it together.
