MSG on its own exists. If you add ketchup to anything you're adding essentially adding MSG or rather glutamates. Anything that is a source of glutamate is secretly MSG. You REALLY like cheese on your burgers and find burgers are basically inedible unless they have cheese on them (inb4 you say kraft is plastic, it uses cheddar which contains significant glutamates in it)? Glutamate was responsible for that along with meats synergy to those glutamates with inosine and guanylate. Cheese was basically MEANT to be on burgers because of that synergy. Your doritos are insanely finely tuned by food scientists to maximize the effects of glutamate in it along with inosine and guanylate. You see more cheese (more sources of glutamate) in there along with garlic and onion powder. No absolutely not, you get this weird chemically taste if you do it. But if you follow a good ratio of seasoning using MSG and throw in Inosine and Guanylate as amplifiers you have a banger that people find "flavorful." I'd know because I personally fucked around with making several different experiments using chicken with just salt, just msg, just I+G, and msg with I+G, and finally salt with MSG and I+G. The final combination tastes and feels MUCH more satisfying to the tongue. I'm not saying it's mandatory to do this in all your cooking, but if you're looking to level up, MSG and I+G make like a 20-30% difference in flavor and mouth feel. Now don't fuck up the ratios or add this shit to everything. For hahas in thanksgiving dinner I decided to add MSG and I+G (just the right amount about 2% of the weight) and everyone noted that the potatoes tasted as if they were eating meat. Nobody liked that. It wasn't that it tasted bad, but the perception of eating mush that tastes like meat was very awkward. I liked it, but I appreciate people's honesty about it. Meat flavored mashed potatoes is odd. It doesn't eliminate the flavor, but it can trick you into thinking the food's better than it is. There's no difference between the man-made MSG and the naturally occurring glutamate.
