My son is very particular about cheese. He refuses to eat anything except mozzarella. Every day, he has a mozzarella cheese toasty. This must happen, or he cant deal.

A world where his cheese toasty is mozzarella is not a world he will accept. If theres no mozzarella, he will scream, he will cry, hell absolutely go to tiny sobbing pieces. Its one of his obsessions.

Hes recently started making his own cheese toasties using a microwave toasty maker. We bought him his own pack of sliced mozzarella.

Today, he accidentally used the wrong cheese. He used sliced tasty cheese instead.

He didnt realise until after hed devoured his cheese toasty and gave it rave reviews.

I was expecting a category 5 cant-deal-athon, but he has apparently decided thats what he wants in his cheese toasties now.

No no. It's a common thing to use Mayo over Butter, both inside and outside the bread. But it's also a very regional thing. You'll find it with Mayo more in the south and Midwest.

Mayo on grilled cheese is actually a thing, and you probably have already had it without even knowing it. You don't like, actually see the mayo, it's spread on lightly in place of butter, so by the time the thing is cooked, it just looks like any other grilled cheese. And then there's certainly no strong mayo taste, it kinda just tastes like a slightly stronger butter. Sometimes diners will use it because it doesn't burn as easily as butter does.

I've lived the vast majority of my life in SE Minnesota and all over Iowa and have never even one time seen anyone make a grilled cheese sandwich with mayo. And believe me, I've known plenty of people with questionable cooking skills/taste but no one has ever ruined a grilled cheese with mayo in my presence. Never. I can't speak for the south, but it's not a Midwest thing anywhere I've lived or visited.

Those look very different, but . . .

While the grilled cheese I make looks similar to that picture, mine are not greasy in any way. First, I use real butter and only enough to get a nice toast on the outsides with only a little (or none if only making it for myself) on the inside. Second, I use grated sharp cheddar cheese, not that nasty, fake American sliced "cheese."

Now, I'll admit that that's not how our grilled cheeses are generally made. I'm just saying that you shouldn't judge ALL of us by your worst example.

Agreed. I love using actual cheddar in grilled cheese instead of that fake cheese. I don't usually trust getting a grilled cheese from restaurants because they might use that gross fake cheese. And if it's that greasy, then people are way overdoing the butter

I've heard of people using mayo on the outside instead and claim it toasts/caramelizes better, but others say it leaves a distinct unappetizing fishy flavor. It's not a common modification. I live in WI and nobody I know prepares it with mayo.

American cheese is real cheese btw, depending on how it's prepared. Real American cheese is made from a blend of cheeses like cheddar and colby combined with an emulsifying agent that lets it melt without splitting between milk solids and milkfats

Central Wisconsin here. I'll do it occasionally, but I prefer butter. Mayo does have a different taste to it that's not bad, but doesn't give me that nostalgic butter vibe I grew up eating.

American cheese from the deli makes perfect Tex-Mex enchiladas. There's a restaurant here with the best cheese enchiladas I ever had and I couldn't figure out their secret until I found a recipe on YouTube that tasted exactly the same, and the secret is just real American cheese.
