I'd use "actress" maybe if it weren't clear who I was talking about. For example:

"Who's that actress in Mission Impossible?"

But if it were already clear I would use actor. ex:

"Jennifer Jason Leigh is a fantastic actor!"

I think it is going away, in fact the word "waiter" seems to be getting replaced with "server."

edit: In all seriousness, I prefer to say actor. There was a lady actor (I don't remember who) who said something like "actress" is limiting because it gives the impression that someone can only play female roles, where a good actor can play anyone.
